Menu Plan: Gaudete Sunday
It is Joy Sunday, and I am choosing joy today. It is doubly hard this year, but it will come.
We have had many good things come to us this week, so it is easy to have gratitude, which becomes joy.

Breakfast: Proscuito and Gruyère Scones with Scallions, Chocolate Zucchini Muffins, Fruit, Milk and Coffee
Dinner: Ham, Horseradish-Dill Potato Pancakes, Steam Sautéed Carrots with Garlic and Dill - Monday
Breakfast: Toast with Za'atar, Feta and Olive Oil, Sliced Oranges, Milk and Coffee
Dinner: Black Bean and Poblano Tortilla Casserole, Spiced Roasted Squash, Quick and Dirty Mexican Rice (made with oil and vegetable broth) - Tuesday
Breakfast: Crock Pot French Toast, Sliced Apples, Milk and Coffee
Dinner: Pesto and Ricotta Baked Pasta, Garlic Bread, Fruit Plate - Wednesday - Ember Day
Breakfast: Steel Cut Oats with Chopped Apples and Cinnamon Sugar, Tea with Honey
Dinner: Black Bean Chili, Fried Tortilla Strips, Oranges - Thursday
Breakfast: Cranberry Walnut Bread, Hard Boiled Eggs, Fruit Plate, Milk and Coffee
Dinner: Spicy Lentils, Roasted Potatoes, Cabbage and Carrot Salad - Friday - Ember Day
Breakfast: Toasted English Muffins with Peanut Butter and Honey, Sliced Apples, Tea with Honey
Dinner: Baked Potatoes with Steamed Broccoli and Faux Cheese Sauce, Fruit Plate - Saturday - Ember Day
Breakfast: Potato and Vegetable Hash, Toast with Marmalade, Sliced Apples, Milk and Coffee
Dinner: Dinner with Friends
