Recipe Bonus: Shami Fattoush

So, I have shared a quickie, cheater version of this, which is really just an Arabic flavored bread salad. This is the real deal. This is the way you will find it in Syria, Lebanon, and Palestine. I love this far more than tabbouleh, but the bread gets soggy in this, and it really needs to be eaten the same day it is made. You can serve the bread on the side like croutons, and store the dressed salad separately from it, if you don't think your family will eat the whole salad in one sitting.

Fried bread:
8 loaves stale, leftover Arabic bread, cut into squares/triangles
1 cup olive oil
1/4 cup za’atar

Salad:
3 romaine hearts
8 Persian/Arabic cucumbers, halved and finely sliced
1/2 a red onion, finely chopped (I cut in segments, lengthwise, then slice thinly crosswise)
2 red bell peppers, finely sliced in matchsticks
8 radishes, finely sliced and cut into matchsticks
1 lb cherry/grape tomatoes cut in half lengthwise
1 bunch scallions, finely chopped
1/2 cup mint leaves, finely minced
1/2 cup flat leaf parsley, finely minced

Dressing:
2/3 cup olive oil
juice of 2 lemons
1/4 cups ground sumac
3 cloves garlic, minced
1 tablespoon pomegranate molasses
salt, to taste

Gently fry the bread in oil over medium heat, until crisp, but not burnt. Toss with za’atar blend. Set aside.

Finely chop the romaine hearts and place in the bottom of a salad bowl. Layer with the remaining salad ingredients.

Whisk together the salad dressing ingredients, and taste to adjust for salt.

Drizzle over salad and toss the salad with the fried bread pieces and dressing to serve immediately.
